
The Alsace region of France is spectacular and unique. Due to its location near the German border, it has a French-German feel in architecture, culture and food traditions. Thus, one of their most traditional dishes—charcoute (which means sauerkraut in French) garnie—feels very German. I visited Alsace more than 25 years ago, and then again for my honeymoon 5 years later. Ever since, this dish has been rolling around in my head, and with today’s new love affair for fermented foods, I thought about resurrecting it in a modern, simple, healthier plant-based version. Alors, voila, c’est ici! My vegan chourcroute garnie!
