They aroma is quite floral compared to Madagascan Bourbon beans, almost a vanilla artisan honey kind of sweetness and is much sought after by pastry chefs. If you are making vanilla extract these beans represent a fantastic choice and being fairly moist will make a faster, stronger extract than drier beans.
Our other extract making recommendation is to actually mix them up with our Madagascan Bourbon B Grade Beans to get a full rounded vanilla extract with top notes, mid notes and low notes!
There are two main species of vanilla plant – Planifolia (usually Bourbon) and Tahitensis. Magadascan Bourbon beans have the classic deep vanilla ‘icecream’ smell. Tahitensis (not grown in Madagascar) are highly sought by pastry chefs for their distinct honey floral aromas.
Different processing techniques and different growing conditions contribute different flavour profiles and aromas to vanilla beans grown in different parts of the world as well as the species type.

Vanilla Beans are graded on many criteria including length, colour and moisture content. The grading process is determined by appearance, moisture and length. The truth is that different types of bean are better for different uses , the highest grade beans are not necessarily the most flavourful, especially for extract making.
